1/4 cup lime juice
1 1/2 teaspoon of oregano
1 teaspoon fresh ground cumin
1 teaspoon of fresh ground mustard seed
1/2 teaspoon of ground black peppercorns
1 teaspoon of smoked paprika
1/2 teaspoon of cayenne pepper
2 teaspoons of chopped garlic
Grey mineral salt to sprinkle
Cover filets with lime juice and olive oil
Let sit 1 hour.
Place dry ingredients in a small bowl and mix together. Coat each steak with spice mixture. Make sure each steak has a good amount of seasoning on it. Put steaks in a small glass dish, cover, and place in the refrigerator for 15 to 30 minutes.
Instructions
- Heat the oven to 400 degrees.
- Heat a large cast iron skillet over medium high heat for 5-7 minutes, or until smoking hot.
- Pat the steaks dry then season all sides evenly with sea salt and freshly cracked pepper, to taste.
